I was inspired by Aggie to write this piece when she posted about a question on easy to prepare meals. I used to do these because our current house help is no good at cooking. (Buti na lang si hubby natuto magluto ng meals so he cooks our dinner na.)
A pressure cooker is the best ally in cooking the easy way. You just put everything in the pot and some veggies and you have a nice meal in a flash. Here are some of the meals I cook using our cooker:
(1) Nilagang baka – I buy beef shank in the supermarket. Put it in the crock pot with onions, peppercorns and water. Let it simmer until tender. Once done, put in the potatoes. As soon as they are tender put in the rest of the vegetables like cabbage, pechay and baguio beans.
(2)Pork Spare Ribs – I buy rib shoulder and have it cut into sinigang cut. Sautee garlic and onions in the cooker. Put in the ribs when the onion is somewhat transparent. Open 1 can of black beans, wash it and put it in the cooker. Add 2 cups water. Cook until tender. And seasoning and kintsay to taste.
(3)Paksiw na Pata – I use the sliced pata that you can find in the grocery. Put them in the cooker with vinegar, soy sauce and sugar. All ¾ cups each. Add bay leaf, dried banana blossoms and peppercorns. Cook it in the cooker until tender.
Another trick in quick cooking is boil around 1.5 kilos of kasim or pigue. Save the broth in the freezer. Both meat and broth can be used in cooking menudo, stir fries and other guisado meals. And since the meat is already cooked you can finish everything in no time.
