WS #76 – Pollo Al Limone

We had this yesterday and is sure tastes as good as it looks.  Crispy on the outside but moist and flavorful in the inside.  :)

This is an original Marcella Hazan recipe that appears in her cookbook, More Classic Italian Cooking, tweaked by Margarita Fores with the use of the turbo Broiler.

In our case, we don’t have a turbo broiler so we made use of our very own oven. Works good as well but cooking time is longer. Here’s the recipe.

Ingredients:
1 Whole Chicken, washed well inside and out then dried with paper towels inside and out
1 or 2 lemons, whole
rock salt to taste
freshly ground black pepper to taste
trussing needle and string (We don’t have this so we made use of a big needle and ordinary thread.)

1. Pound lemons until slightly bruised and tender.
2. Pierce all over with a toothpick.
3. Season chicken with salt and pepper, inside and out.
4. Stuff chicken with lemons and sew up the cavity well.
5. Roast the chicken breast side up in a turbo broiler at 375 F for 40-45mins.
6. Save all the drippings and remove excess oil for a lighter sauce.
